Crystal Lake coffee shop is now housing a little pastry shop.
Pastries enjoyed throughout the Crystal Lake area are now being housed at a favorite coffee shop. Real Cake, Inc. has now opened inside Conscious Cup Coffee Roasters. Real Cake owner Wendy DeBord brings over 25 years of experience as a pastry chef and 10 years as a fine artist. DeBord's cupcakes, bars, cinnamon rolls, macaroons (gluten free), shortbreads, cannoli and more are on display at Conscious Cup, 5005 Northwest Hwy. in Crystal Lake. And don't expect her treats to taste the same as the items you might buy at a grocery store. "Everything is real and baked from scratch — no mixes, nothing frozen — with real butter and flavors like real vanilla beans and roasted strawberries," DeBord said. And if her pastries taste familiar, you might …

Crystal Lake coffee shop gets high marks from Coffee Review.
Crystal Lake's Conscious Cup is starting to make its mark in the coffee world. Coffee Review, a well-respected reviewer and online coffee buying guide, recently rated one of Conscious Cup's coffees and the review came back sparkling. Coffee Review tasted the Cup's Ethiopia Harrar, and it rated a 94 out of 100. "Intense aroma and flavor dominated by deep, jasmine-like flowers and tartly sweet fruit: pomegranate, bergamot, raspberry. Rich, complexly expressed acidity; lightly syrupy mouthfeel. The finish is lemony, sweet, and very long," the review said of the Cup's Ethiopia Harrar. In the categories of Aroma, Acidity, Flavor and Aftertaste, the Ethiopia Harrar got 9 out of 10. It got an 8 in the Body category. Taking a page from wine …

Perhaps you’ve never smelled fresh coffee … really fresh coffee … not the canned stuff that sits on a grocery-store shelf, sometimes for months. At Crystal Lake’s Conscious Cup, the coffee beans are green, arriving in burlap bags from remote regions of Africa and South America. Jason Shipley — one of the owners of Conscious Cup — was operating the roaster Friday afternoon, cooking green coffee beans until they turn deep-dark amber. You may have never before experienced the aroma of roasting coffee beans. And the coffee itself, you could taste the subtleness and nuance of the exotic places and growing conditions: The effects of the climate, altitude, rain and sunlight on each bean, Shipley said. “The coffee here is outstanding,” said …
