Grandma's Cherry Pecan Bars

This recipe has been passed down by my family. My Grandma used to bake these bars... they are easy to make, delicious and festive in color.

Grandma's Cherry Pecan Bars

Crust:

  • 1/2 c. butter
  • 1 & 1/4 c. flour
  • 1/4 c. powdered sugar

Mix crust ingredients like a pie crust and pat firmly into a 9"x13" pan. Bake at 350 degrees for 15 - 20 minutes on center rack in oven. Bake until slightly brown.

Filling:

  • 2 eggs, well-beaten
  • 1/2 tsp. baking powder
  • 1 c. pecans or walnuts
  • 1/2 c. maraschino cherries, chopped
  • 3/4 c. coconut
  • 1 c. sugar
  • 1/4 c. flour
  • 1 tsp. vanilla
  • pinch of salt

Mix filling together with an electric mixer. Pour over crust. Bake 30 minutes at 350 degrees. Once cooled, cut into bars.

Stephanie, these look appealing, but my kids aren't wild about coconut. What do you think would work better, leaving it out altogether or substituting with another dried fruit --maybe some minced dried apple or apricot.

Hmmmm?...well, my kids weren't wild about coconut either when they were little, but they ate these because they didn't realize coconut was in them! Once the ingredients are mixed together and baked, the coconut has a different consistency. I really am domestically challenged - so I can't suggest a substitute and I'm not sure if they would be OK without the coconut!
